Summer Mimosa

Ingredients for the syrup:

  • 130g sugar
  • 230ml water
  • 260g blueberries
  • Peel of 1 lemon

Ingredients for the mimosas:

  • 460ml lemonade
  • 4 Magos
  • Blueberries for decoration

Preparation:

In a saucepan over medium heat, add the water and sugar until dissolved. Add the blueberries and the lemon zest and bring to a boil. Reduce the heat and simmer for about 5 minutes, until the blueberries fall apart. Remove from heat and let cool for 10 minutes. Strain the mixture into a glass. Pour a tablespoon of the mixture into champagne flutes. Top 1/4 of the glass with lemonade and fill with Magos. Repeat until everyone is served.
